Ingredients:
- 1 cup fresh blueberries
- 1/4 cup sugar
- 1 tbsp lemon juice
- 1 tsp cornstarch
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 8 egg roll wrappers
- Vegetable oil for frying
- Powdered sugar for dusting
Directions:
- In a small saucepan, combine blueberries, sugar, lemon juice, and cornstarch. Cook over medium heat until the mixture thickens and the blueberries start to break down, about 5 minutes. Let cool.
- In a medium bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
- Lay an egg roll wrapper on a clean surface. Spread 2 tablespoons of the cream cheese mixture in the center of the wrapper, then add 1 tablespoon of the blueberry mixture on top.
- Fold the sides of the wrapper over the filling and roll tightly. Use a bit of water to seal the edges. Repeat with remaining wrappers and filling.
- Heat about 2 inches of vegetable oil in a large skillet over medium-high heat. Fry the egg rolls in batches until golden brown, about 2-3 minutes per side. Drain on paper towels.
- Dust with powdered sugar before serving.
