Amish Harvest Casserole




A comforting slow cooker casserole combining ground beef, seasonal vegetables, and cream sauce topped with melted cheese. Simple Amish-inspired comfort food.

Ingredients

  • 1 pound ground beef.
  • 1 onion, chopped.
  • 2 cloves garlic, minced.
  • 1 teaspoon salt.
  • 1/2 teaspoon black pepper.
  • 1 cup carrots, sliced.
  • 1 cup potatoes, diced.
  • 1 cup corn kernels.
  • 1 cup green beans, chopped.
  • 10.5 oz cream of mushroom soup.
  • 1 teaspoon dried thyme.
  • 1 teaspoon dried parsley.
  • 1 cup shredded cheddar cheese.

Instructions

Cook ground beef in skillet until browned, drain fat.
Add onion and garlic to beef, cook until soft.
Transfer beef to slow cooker, add vegetables, soup and seasonings.
Cover and cook on LOW 6-8 hours until vegetables tender.
Add cheese in last 30 minutes, let stand 10 minutes before serving.

Can prep vegetables ahead.
Keeps 3-4 days in fridge.
Freezes up to 3 months.
