Clodhopper Candy




I am always up for trying a new candy, especially when it’s a regional favorite. And that’s just the case with today’s recipe! These Clodhoppers are apparently an old Canadian favorite, but have become very hard to find. Despite growing up pretty close to the Canadian border, I had never heard of these sweet treats, but was eager to give them a try. Let me tell you, I am so glad I did! Let’s get into how they’re made…

The ingredient list is quite simple and they come together in a matter of minutes, without even turning on the oven. Can’t beat that! All you’ll need is a bag of white chocolate chips, two sleeves of honey graham crackers, and just over a cup of lightly salted cashews. Melt the chocolate chips in the microwave until smooth and then mix in the crackers crumbs and cashew pieces. Spread the mixture onto parchment paper for easy release and let it cool and solidify.

INGREDIENTS

  • 2 sleeves graham crackers, crushed (about 2 ½ cups)
  • 1 ¼ cup lightly salted cashews, roughly chopped
  • 12 oz white chocolate chips
  • Optional: 1/2 teaspoon cinnamon

PREPARATION

Line a baking sheet with parchment paper. Set aside.
In a large bowl, microwave chips in 30 second increments, stirring each time, until fully melted.
Add cracker pieces and cashews to chocolate and mix until well combined. Add cinnamon if using.
Spread mixture onto the parchment paper in a thin layer. Let cool.
Once candy has fully cooled, break into small pieces and store in an airtight container or bag.
