Gobbler Rolls Recipse

Ingredients

  • 1 12” Tortilla wrap (warmed – microwave with a damp paper towel for 15-20 seconds)
  • 3 Tbl mashed potatoes
  • 2 Tbl corn *optional
  • 3 ounces of Thanksgiving Stuffing (cut up or broken into pieces)
  • 3 ounces of rough cut Thanksgiving turkey
  • 3 ounces of best ever cranberry relich
  • 1 Tbl butter, melted or cooking spray

Instructions
Preheat broiler with the rack on the upper third part of the oven.
In the middle of the wrap spread out the mashed potatoes in a 3”x 7” strip.
On top of that add the corn.
Next add the chopped up pieces of stuffing and turkey, evenly distributing it on the corn and mashed potatoes.
On top of that add the cranberry relish, again, evenly distributing it. *You don’t want it to be runny, you want the chunks and thick syrup part.
Fold up the left and right edges in approximately 2 inches to create a pocket on each side.
Fold up the bottom edge to meet the top edge. You will now have a half-circle with a top and bottom layer of tortilla and filling between.
Pull the bottom layer of the wrap away from you, gently, as you curl the top layer over the filling. Pulling the bottom layer helps you tighten the wrap.
Roll the top layer toward the edge of the bottom layer until you have rolled the entire wrap into a cylinder.
Place the wrap on a pan and lightly brush the top with butter or cooking spray.
Broil for 3-6 minutes or until the tortilla starts to get crispy golden brown.
Using kitchen tongs, flip the wrap over (you can lightly brush this side with butter if you so choose) and broil for 3-6 minutes or until crispy golden brown.
Remove from the oven and allow to rest for about 1-2 minutes.
Serve with a slice of homemade pecan or pumpkin pie!
In a 12” non-stick pan, over medium heat, add the butter.
Assemble the wrap per steps 2-9 above.
Place the wrap, seam side down in the pan.
Pan sear for 5-7 minutes or until the bottom is crispy, golden brown.
Using kitchen tongs, gently flip over and pan sear again to obtain that crispy, golden brown appearance.
At this point you can do this to the other 2 sides but it’s not necessary.
Remove from the pan and allow to rest for 1-2 minutes.
Serve with a slice of homemade pecan or pumpkin pie!
