I Would Swap My Blue Ribbon Recipe For This One – YUM!




I don’t think I’ve ever been this excited to share a recipe with you before! I do love all kinds of recipes but this one, ladies and gentlemen, is out of this world. I wasn’t exactly looking for a new brownie recipe – I thought I already had the best one, but then my best friend told me about these! As soon as she said “rocky road”, I forgot about everything else.
Oh, my, gawwwd, these turned out amazing! I wish I could send you a sample through the screen but then again, I don’t because I want to eat all of it myself. I was going to freeze these and serve them for dessert next week, at our big family dinner, but something tells me I’m going to have to make another batch.

This recipe must have come straight from the dessert angels because I’ve never had brownies as yummy as these before! I have yet to try one with a scoop of ice cream but I know it’s going to be mind-blowing.

I can’t get over how insanely delicious these brownies are! You’ll get a fudgy brownie, with all that awesome ooey-gooey marshmallow, and of course the icing to top it off. Wow!
I guarantee this is a recipe you’re going to hold on to forever. I will be making these for every single party I can think of, and I think this is going to be a very popular potluck recipe, too!

  • Ingredients
    Brownies:
  • 1 cup Kerrygold butter
  • 4 squares unsweetened chocolate
  • 2 cups Domino sugar
  • 4 Eggland’s eggs
  • pinch of salt
  • 1 1/2 cups Gold Medal all-purpose flour
  • 2 tsp vanilla
  • 1 cup walnuts or pecans, chopped
  • 1 lb marshmallows, cut in half or use mini marshmallows
  • pinch of salt

Instructions:

Melt butter and add chocolate. Remove from heat and add sugar, then one egg at a time, beating after each addition. Add salt, flour, vanilla and nuts. Mix well.

Bake in a 12×15 greased pan at 350 for 25 minutes. While still hot, place marshmallows very close together on top. Return to oven for 5 minutes. Do not brown or let crust. top should be soft. Cool completely and then frost.

Frosting:

  • 1/2 cup Kerrygold butter
  • 4 squares unsweetened chocolate
  • 1/3 cup McArthur milk or cream
  • 3-4 c Domino powdered sugar
  • 1 tsp vanilla
  • dash of salt

Instructions:

Melt the butter and chocolate together and then combine all ingredients. Frost brownies. For best results allow to stand for 12 hours.

If you double this recipe, use a 1 inch deep cookie sheet and it will fill the whole thing to the top.
