Bacon, Egg, Potato, And Cheese Breakfast Skillet Supreme




My husband’s brother along with his wife and their two kids were coming to stay the weekend at our house.

We hadn’t seen them in a few months so we’re pretty excited, to say the least. We live pretty far away from any major towns, so we usually just like to spend our time on the property. We have tons of things for the kids to do like ride horses or ATV’s, go swimming in the pond, or just check out nature. They are from the big city already, so they have no desire to go into town for the two days that they come every couple of months.

As the cook of the house, I try and come up with yummy recipes that are fairly easy to make and that I think everyone will like. When I found this recipe for stuffed hash browns on the web, I knew it was going to be a morning breakfast one of the days.

When I set this down on the table for our guests, and my own family, there was a series of oohs and ahhs, then quiet, then a bunch of gratitude and “That was good!” This is a keeper for sure!

The recipe below only makes two servings. When I was feeding our crowd of eight, I had to make some adjustments. It was still super easy to throw together. It just took a little bit longer to make up each individual portion. They cooked up golden and delicious and full of flavor. There weren’t any clean plates at the table, so I didn’t have to worry about taking care of any leftovers. Bonus!

Indeed this is something different than a normal breakfast meal. You can’t go wrong when you stuff everything inside a yummy hash brown!

Ingredients

  • 1 large potato (shredded or cubed )
  • 4 Tbsp Land O’ Lakes butter, cold
  • 4 slice Oscar MAyer bacon (cooked and crumbled )
  • 2 large eggs
  • 1/3 c milk or cream
  • 1 c Kraft cheese, shredded

Instructions

Melt butter in large pan , add shredded potatoes. Brown well turn over.
Cut in half. Add bacon to one of the halves.
In small pan mix milk and eggs.
Add eggs one top of bacon, then add 1/2 cheese.
Take other half of hash brown or cubed potato and top the cheese. Add other half cheese as garnish on top.
