Creamy Chocolate Pie Covered In Sweet Meringue




This recipe is a real keeper in my book!
You know what they say whenever we’re lonely—eat chocolate to lift up your mood. As much as I hate to admit it, I truly do believe in that. It’s not just the chemical in it that lifts my mood; it’s the taste itself. Anything chocolate just tastes so great that you will have a hard time remaining in your cloud of doom. One bite of any chocolate and you will feel it melt in your mouth.
You will immediately taste its heavenly goodness and you are already done for! You will just find yourself smiling even if you truly didn’t want to.

I found this recipe just a few nights ago. I was quite lonely because I was feeling homesick all of a sudden and I couldn’t leave for home because I have too many work that I couldn’t abandon. We still get that sometimes, don’t we?
We just want to regress to our childhood and just eat our mothers’ cooking. So whenever I feel such nostalgia, I make myself anything chocolate and this was on the menu that last time. One bite of this heavenly pie and I was already out of my dark cloud. This would definitely lift up your mood, I tell yah! It will cure any lonely heart out there.

For a simple dessert after a hearty meal, this recipe is just perfect. Everyone loves chocolates. They will appreciate this kind of dessert that gives them a satisfying treat after a rich meal to balance the strong flavors. Pair this with coffee and it’s perfection! You will have anyone begging for another slice. So you should actually make more than just one of this beautiful dessert creation.
Who can resist a chocolate cream pie? It’s all you will ever want in a dessert pie! Chocolates and cream together?

Ingredients:

  • 1 1/2 c Domino sugar
  • 1/3 c Gold Medal all purpose flour
  • 1/4 c Toll House cocoa, unsweetened
  • 3 large egg yolks, beaten
  • 2 c pet milk (evaporated) or milk
  • 1/2 Kerrygold stick butter
  • 1 pie shell, baked
  • MERINGUE
  • 3 large egg whites
  • 3 Tbsp sugar
  • 1/8 tsp cream of tartar or baking powder

NOTE: I LIKE TO USE 4 EGG WHITES, 6 TABLESPOONS (1/3 CUP) SUGAR, 1/8 TSP CREAM OF TARTAR AND A TSP VANILLA TO MAKE THE MERINGUE,
Instructions:
1. Put all ingredients (for pie filling) in saucepan and cook until thickened and bubbly. NOTE: I mix beaten egg yolks and milk together in saucepan then add dry ingredients and butter; whisk until bubbly and thickened.
2. Pour into cooled pre-baked pie shell.
3. Make meringue by beating egg whites until stiff. Add sugar one tablespoon at a time. Add cream of tartar or baking powder (and vanilla if desired.) Beat until stiff.
4. Put meringue on top of pie and bake at 400 degrees 5-8 minutes or until lightly brown. Cool on wire rack.
