Everyone Needs a GREAT Corn Casserole Recipe!
Believe it or not, I didn’t use to be a fan of corn, in any form. Whenever there was a corn dish available, I would just usually pass on it. I know it’s strange, considering I have never been a picky eater, at all. However, the first time my grandmother made me corn casserole, I gave in. It was just too good to resist!
Since that day I would have happily eaten grandma’s corn casserole at least once a week. For a long time, it was still the only way I would enjoy corn. Fortunately, I’ve learned to love it over the years, but corn casserole is still my absolutely favorite.
As soon as I tried this recipe, I noticed it tasted almost exactly like the one my grandmother used to make. Such sweet memories! This casserole is perfect alongside any main entree or even as a snack!
This casserole is super easy to make. You only need six ingredients (seven, if you’d like to spice it up a little, as mentioned in the recipe).
If you’d like a bit of sweetness, feel free to add some sugar to the corn mix. I absolutely love serving this corn casserole with grilled chicken and mashed potatoes – it’s a combination my whole family loves. What’s your favorite way of serving this? Do let us know in the comments!
Ingredients
- 1 can sweet corn, drained
- 1 can cream-style corn
- 1 package Jiffy corn muffin mix
- 1 cup Daisy sour cream
- 1 stick Land O’ Lakes butter, melted
- 1 1/2 cups shredded cheddar
- Add 1 – 4 oz can of chopped green chilis and some red pepper flakes if you like it with a little KICK!
Instructions:
Preheat oven to 350 degrees F. Grease a 9×13″ casserole dish.
Mix together all the ingredients until well combined.
Pour into the prepared casserole dish.
Bake for about 25-30 minutes, or until golden brown and cooked through.
